Makes 4 to 6 servings. 24 SALADS NAPA SALAD Senator Sam Brownback, KANSAS * SALAD 1 head Napa cabbage • 6 green Ofllons 2 packages Ramen noodles, flavor packet removed 4 ounces slivered almonds 4 ounces sunflower seeds, unsalted 1h. cup butter or margarine DRESSING 2 tablespoons soy sauce 1 cup sugar 1h. cup tarragon vinegar 1 cup sunflower oil SALAD Dice cabbage and onions. Mix together then refrigerate for at least 2 hours. Break apart Ramen noodles. Put noodles, almonds, sunflower seeds, and butter in skillet and saute until slightly brown.

Makes 8 to 10 servings. SALADS MARINATED VEGETABLE SALAD * Representative Ike Skelton, MISSOURI MARINADE 1/2 cup apple cider vinegar 1,4 cup sugar 1 cup vegetable or olive oil 2 cloves garlic, pressed with garlic press or mashed 1/2 cup red wine vinegar 1 teaspoon dry mustard 2 teaspoons salt 1 tablespoon dried oregano leaves, crushed 1 teaspoon pepper 1 8-ounce bottle Italian dressing VEGETABLES 2 green peppers, thinly sliced 1 cucumber, thinly sliced 1 head cauliflower, broken into florets 6 carrots, thinly sliced 1 pound fresh mushrooms, sliced 5 stalks celery, sliced 1 bunch green onions, sliced 1 dozen cherry tomatoes, halved MARINADE Bring apple cider vinegar to boil.

One story has it that Senator Fred Thomas Dubois of Idaho, who served in the Senate from 1901 to 1907 and was chairman of the committee that supervised the Senate Restaurant, gaveled through a resolution requiring that bean soup be on the menu every day. Another account attributes the bean soup mandate to Senator Knute Nelson of Minnesota, who expressed his fondness for it in 1903.
